SENSORY PROFILE
DESCRIPTION
Specialty Typica & Bourbon Rojo is a specialty coffee from Finca Chelín, located in Candelaria, Loxicha, Oaxaca. Producer Enrique López carefully grows this microlot to highlight the unique characteristics of Typica and Bourbon Rojo varieties. The result is a sweet, balanced, and flavorful coffee that reflects the care and tradition behind each harvest.
What makes Specialty Typica & Bourbon Rojo unique is its natural process. The coffee cherries are dried whole under the sun, keeping the fruit around the beans throughout the process. Only fully ripe cherries are selected before they are slowly dried under controlled conditions.
Keeping the coffee in contact with the fruit during drying helps develop greater sweetness, a silky texture, and a more complex fruit-forward profile. This process allows the characteristics of the microlot to shine while reflecting the careful work of Enrique López at Finca Chelín.
The medium roast highlights the coffee’s natural flavors and origin. Each cup offers a silky body, bright acidity, and a clean finish that lingers.
If you are looking for a naturally processed specialty coffee, Specialty Typica & Bourbon Rojo is a great choice for your favorite brewing method. Its fruity profile and careful production make it a great way to discover Mexican specialty coffee.
